Grown in the lava fields of Hawaii, papaya is a tropical climate fruit. Typically, it is picked in a mature, green state. This “Green Papaya” is rich in two very important enzymes that break down proteins, Papain and Chymonpapain. As a supplement to one’s regular diet, the enzymes facilitate very powerful digestive action. The enzymes are stable in the same range of acidity as the human gastric environment (1.0 to 1.8 pH). Importantly, these enzymes are most concentrated when the fruit is picked green. After picking they dissipate as the fruit ripens and are not found at all in ripe papaya. Therefore, to offer the greatest concentrate and benefit of these enzymes, the papayas are picked green, cleaned, dried and processed before the fruit is allowed to ripen. This is why Green Papaya is a much more effective digestive and regulatory aid than simple papaya. In addition to the benefits as a digestive aid, evidence suggests that taking Green Papaya regularly can minimize the formation of ulcers in the human stomach. Further, it has been reported that physicians have successfully used Chymonpapain to aid in the healing and recovery of surgery patients. Carpaine, an alkaloid compound also found in Green Papaya has been reported to have certain antibacterial properties that can inactivate many types of bacteria and parasites. Analysis of dehydrated Green Papaya shows it contains less than 10% moisture, 8% protein (the enzymes described are a form of protein), 70% carbohydrates (pectin and fruit sugar), and 5% crude fiber.
